Greek pumpkin sauté
- 7 oz Pumpkin
- 2 Tomato
- 1 tbspz Tomato puree
- 5 Olives
- 1 tsp Basil
- 1 clove Garlic
- 1.8 oz Goat cheese
Cut the pumpkin in small cubes and fry in some olive oil until half ready (about 7-8 minutes).
Remove the skin from the tomatoes, chop them and add to the pumpkin.
Add the tomato puree in a couple of minutes. Mix in all the other ingredients.
Add a couple of tablespoons of water, cover the frying pan and sauté on medium heat for 5-10 minutes until ready.
Add the crumbled goat cheese when serving. The dish can be served with meat, fish or pasta.
